Cooking Yet Again!

I’ve been on a roll with cooking and baking these days! I love experimental and easy recipe cooking/baking. If you know me, I am not much of a cook. I’m actually very terrible at it, so the fact that I’m cooking and baking often now is a new phenomenon!

The first thing I baked today were some Greek Potatoes. I didn’t leave it in the oven long enough though. The larger cuts of potatoes were still hard inside, so I ended up microwaving them for a few minutes before I continued eating. The reason why I didn’t put them back in the oven was because I was baking some sugar/cocoa cookies.

I baked these cookies based on this recipe; however, I did not have vegan margarine, choco chips, and vanilla. I followed the recipe substituting the vegan margarine with regular margarine, the choco chips with cocoa powder, and left the vanilla out. The taste was still fantastic (but it looked questionable). I butcher vegan recipes all the time. My finished product always ends up being non-vegan.

I am also cooling some pomegranate jello with my very own recipe. I hope it turns out yummy.
